INGREDIENTS to make Afghani Pulao:
Mutton 1kg
Boiled rice 1kg
Ghee 3 tbsp
Almonds 50 grams
Raisin 100 grams
Carrot (shredded) 2.5 cup
Sugar 3 tbsp.
Oil 1 cup
Fried onion 1 cup
Water ½ cup
Garlic paste 1.5 tbsp
Mutton stock 3 cups
Ground spices 2.5 tbsp
Salt (to taste)
DIRECTIONS to make Afghani Pulao:
1. In a pressure cooker add, mutton 1 kg, pressure cook for 20 minutes on medium flame, and set aside.
2. In a pan add ghee 3 tbsp, almonds 50 grams, raisin 100 grams, carrot (shredded) 2.5 cup, sugar 3 tbsp.
3. Cook for 2-5 minutes on low flame, and set aside.
4. In another pan add oil 1 cup, fried onion 1 cup, add boiled mutton.
5. Fry for 5-7 minutes on medium flame.
6. Add water ½ cup, cook for 5-7 minutes on medium flame.
7. Add garlic paste 1.5 tbsp, mutton stock 3 cups, ground spices 1 tbsp, salt (to taste).
8. Cover and cook for 10 minutes on medium flame.
9. Add ground spices 1.5 tbsp, add half quantity of (fried carrot and dried fruit).
10. Add layer of boiled rice 1 kg.
11. Add remaining half quantity of (fried carrot and dried fruit).
12. Cover (pan with foil or wrap lid with kitchen towel or any cloth)to steam cook for 20 minutes on low flame.
