INGREDIENTS FOR MARINATION: Mutton 1/2 kg Yogurt 1/2 kg Garlic 1 tbsp Ginger 1 tbsp Salt 1 tsp Red chili powder 1 tbsp Turmeric powder 1/2 tbsp Meat tenderizer powder OR papaya powder 1 tbsp Green chili 2 to 3 Lemon juice 2 tbsp Green coriander 1 bunch Ground spices 1 tbsp Black pepper 1 tsp Fried onion 2 oil 4 tbsp mix well and refrigerate for 1-2 hours to marinate. Rice (soaked) 1/2 kg Water 5-6 cups Green cardamom 6-8 Cloves 4-5 Cinnamon stick 2( 1 inch) Bay leaf 2-3 Salt (to taste) Cooking oil 3-4 tbsp Saffron 1/2 tsp Milk 1/2 cup DIRECTIONS: 1)Add 5-6 cups of water in a pan add 6-8 green cardamom, 4-5 cloves, cinnamon stick, bay leaf 2-3, salt (to taste) cooking oil 3-4 tbsp bring it to boil. 2)After boiling the water, add 1/2 kg of rice and cook till half done (50% cooked) and keep aside. 3)In a large pan spread a layer of marinated Mutton, then spread a layer of half rice, sprinkle coriander leaves, mint leaves, green chilies, fried onion, milk mixed with 1/2 saffron. 4)Spread the second layer of rice sprinkle coriander leaves, mint leaves, green chilies, fried onion, milk mixed with 1/2 saffron, cooking oil 3-4 tbsp, cover with foil, or any thick cloth to lock the steam in the pan. 5)Cover & cook for 10 minutes on high flame. 6)cook for 50 to 55 minutes on low flame. The delicious Hyderabadi Mutton Dum Biryani is ready to eat, must try it.
